Today I continue my quest in creating and posting one block a day of the fabulous That Town And Country Quilt by the lovely Susan-Claire Mayfield. This is day three hundred and five of that project.

Eggs for sale!

This is a constant theme at the farm. Sisu Farms produces brown-shelled eggs, which are generally larger than white-shelled eggs. The nutritional value isn’t any different between the two.

As the eggs begin their cycle, they are all white; as the eggs progress, additional shell layers are added, and the final color is achieved. The color of the egg is determined by the breed of the bird.

Female chickens are called pullets until they begin to lay eggs.

A hen is born with a certain number of eggs. She will lay until she runs out of eggs.

Eggs can be frozen for up to a year. Lightly beat with a pinch of salt and freeze in a ziplock bag.

Eggs are a wonderfully nutritious food. A high-quality source of protein and a decent source of vitamins K, D, B6, calcium, and zinc. All at 77 calories.
